SPICE MIX - Ingredients: oregano, rosemary, marjoram, creeping thyme, sage
Use: mix of spices used for preparing meat and fish dishes, pasta, marinades, rice and sauces. Hvar spice mix consists of strong-smelling wild aromatic island plants.
VEAL UNDER THE BELL (for four persons)
- 1.5 kg of deboned veal
- 2 dcl of olive oil
- 1 kg of potatoes
- 500 g of fresh tomatoes
- 1 bell pepper and 1 eggplant
- 2 dcl of red wine
- garlic, onion, salt and pepper
- Hvar Spice mix
Grease a baking dish with olive oil and fill it with sliced potatoes, add other vegetables, salt and pepper and stir. Put salted meat seasoned with Hvar spice mix on the vegetables. When the fire starts burning, spread the embers apart, place a mat, and put the dish containing the veal on it and cover with the embers. Cook for about an hour. Remove the bell, pour the wine and continue roasting. Enjoy your meal!
